Porchetta Di Testa- boned out pigs head, seasoned, wrapped up into roast, trussed, roasted, cooled, then sliced thin
boy do i love my job

Pigs Skull
at this point the pigs head is wrapped up and stuffed with herbs. the head to the left is shaped only because of the way it is rolled up (no bones). to the right is obviously the skull of the pig



(did you spot the pigs kidneys?)

  2. Pig's kidneys, top photo to the right? How did those get mixed up with the Porchetta process? haha! Do you make a sandwich with this like deli meat when it is done? I finished all the tongue I bought within 2 days man. Delish!
